Chicken Caesar Bread Bowl
A bold, comforting take on the classic Caesar salad, served in crisp, oven toasted bread bowls and finished with house made croutons and a rich, umami forward Caesar dressing. Serves 4-6.

- 4–6 small bread bowls
- 3–4 romaine hearts, chopped
- 1 rotisserie style cooked chicken, deboned and chopped
- Shaved Parmesan, for serving
- Lemon wedges, for serving
Quick Croutons
- Bread removed from bread bowls, torn into bite size pieces
- Olive oil, as needed
- Kosher salt, to taste
- Fresh cracked black pepper, to taste
- Garlic powder or preferred seasoning blend, to taste
Caesar Dressing (about 1¼ cups)
- 2 anchovy fillets, very finely minced (or 1 tsp anchovy paste)
- 2 garlic cloves, microplaned
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 large egg yolk, room temperature
- 1 tbsp fresh lemon juice
- ½ tsp lemon zest
- ½ tsp kosher salt
- Fresh cracked black pepper, to taste
- ¾ cup neutral oil
- 2 tbsp extra virgin olive oil
- ¾ cup finely grated Parmigiano Reggiano
- ½ tsp white miso
- ¼ tsp smoked paprika

- Prepare the Bread Bowls
Slice the tops off the bread bowls and carefully hollow out the interiors, leaving sturdy walls intact. Reserve the removed bread for croutons. - Make the Croutons
Preheat oven to 425°F. Toss bread pieces lightly with olive oil, salt, pepper, and garlic powder (or seasoning of choice). Spread on a baking sheet and bake for about 20 minutes, stirring halfway, until golden and crisp. Set aside to cool. - Prepare the Caesar Dressing
In a medium bowl, mash anchovies and garlic into a smooth paste. Whisk in Dijon, Worcestershire, egg yolk, lemon juice, zest, salt, and pepper.
While whisking constantly, slowly drizzle in the neutral oil—starting with drops, then a thin stream—until thickened. Whisk in olive oil. Fold in Parmesan, miso, and smoked paprika. Let rest 10–15 minutes, then adjust seasoning to taste. - Assemble
In a large bowl, toss chopped romaine with enough dressing to lightly coat. Add chicken and croutons and gently combine. - Serve
Spoon salad into toasted bread bowls. Finish with shaved Parmesan and a squeeze of fresh lemon. Serve immediately.
